Una de las ramas que llama mucho la atenci\u00f3n en nuestro rubro es la parte gastron\u00f3mica, donde los hongos por sus cualidades otorgan a las preparaciones un sinf\u00edn de ricas posibilidades, adem\u00e1s, de sabores incre\u00edbles y muy vers\u00e1tiles\u201d comenta Katherine Provoste de La Ra\u00edz a la Cocina Vegana, emprendimiento dedicado a comida libre de productos de origen animal.<\/p>\n<p style=\"text-align: justify;\">Por su parte Dinelly Soto de la ONG Mic\u00f3filos Chile se\u00f1al\u00f3, \u201cestos talleres son una gran oportunidad de conocer la importancia de estos organismos para la salud de nuestros bosques, donde conocer las especies silvestres comestibles sirve para valorarlos a\u00fan m\u00e1s, pudiendo adem\u00e1s prevenir posibles intoxicaciones por desconocimiento\u201d.<\/p>\n<p style=\"text-align: justify;\">\u201cDurante el taller junto a Dinelly podremos reconocer que especies son comestibles, aprenderemos a diferenciarlas de las t\u00f3xicas, y por supuesto c\u00f3mo cocinarlas y preservarlas en deshidratados, escabeches, pates y otras ricas preparaciones\u201d, comenta Orlando Garabito de La Ra\u00edz.<\/p>\n<p style=\"text-align: justify;\">\u201cHSC como <em>Fistulina antarctica<\/em> (lengua de vaca), <em>Pleourotus ostreatus<\/em> (chanpi\u00f1on ostra), changles (<em>Ramarias<\/em>), gargal (<em>Grifola gargal<\/em>) o los <em>Agaricus <\/em>(champi\u00f1ones blancos) son especies con buenas cualidades gastron\u00f3micas que crecen de forma silvestres en nuestros bosques, pero de las cuales es muy importante aprender a reconocerlos y tambi\u00e9n a recolectarlos de una manera respetuosa y sostenible\u201d enfatiz\u00f3 Dinelly Soto.<\/p>\n<p style=\"text-align: justify;\">Este taller tiene cupos limitados y un costo de $20.000 por persona. Incluye materiales post taller y un completo recetario f\u00fangico.
